Hi
I currently have two tunnels to two very different locations and the pop's are in different countries.
I read that your only allow one subnet, I'm just wondering is that one subnet over all or one subnet per tunnel?

One subnet per tunnel ;)
And no, one cannot get one subnet over more than one tunnel, and it will be very hard to justify for most people that they would need more than one subnet per tunnel too.
